Delicious Baked Oatmeal Muffins That Happen To Be Gluten Free and Diabetic Friendly

 

Yummy Snack Idea....

There never seems to be enough time in the day so I'm always looking to make my life easier especially in the cooking department.  I can't tell you how happy I was when I found this fast, easy to make, healthy recipe for individually baked oatmeal muffins that happen to be gluten free and diabetic friendly.  We are big gluten-free oatmeal fans in this house so I knew I had to give it a shot.  And I am glad I did.  They were a huge hit with my family and everyone loved that there were plenty in the fridge.  It was like having a yummy oatmeal ready-to-grab at any time.  It made my life a little easier for sure. And I knew I had to share it with you. 

 

Recipe:

  • 2 organic eggs
  • 1 tsp vanilla extract
  • 2 cups organic apple sauce
  • 1 mashed banana
  • 6 packets of stevia** OR 1/2 cup of honey  (I used 1/4 a cup of honey)
  • 5 cups old fashioned oats (I used Bob Red Mill's Gluten Free Oats)
  • 2 tbsp of flaxseeds meal (I used chis seeds)
  • 1 tbsp ground cinnamon 
  • 3 tsp baking powder
  • 1 tsp sea salt
  • 2 1/4 cups of organic milk (I used almond milk)
  • Optional add-ins or toppings: shaved almonds, walnuts, apple, blueberry, chocolate chip, cranberries, etc.  (I created 4 different kinds.  1 - cranberry and slivered almonds.  2 - banana and walnut.  3 - organic apple and pecans with dates.  4 - organic wild blueberry.


Instructions:

  1. Preheat oven to 350 degrees.
  2. Mix eggs, vanilla, apple sauce, bananas, and stevia or honey in bowl.
  3. Add in oats, flax (chia seeds), cinnamon, baking powder, salt and mix. Then add to wet ingredients and mix well.
  4. Finally add milk (or milk alternative) to the ingredients and combine.
  5. If adding the 'add-ins" mix it now.  I separated the ingredients into 4 different bowls and then made the individual flavored muffins.
  6. Spray muffin tins (I used silicone muffin holders) with coconut oil cooking spray or use cupcake liners. Pour mixture into muffin tin cups.
  7. If you just want to add toppings, this is the time to do it.
  8. Bake for 30 minutes until toothpick comes out clean.
  9. Cool and enjoy. You can also freeze them.
